INGREDIENTS

  • 1 1/2 cup white beans, cooked
  • 1 1/2 cup green beans, fresh
  • 1 1/2 cup lentils, cooked
  • 1 cup bulgur wheat, cooked
  • 1 tbsp. lemon zest
  • 1/4 cup fresh lemon juice
  • 1 English cucumber, fresh
  • 1 1/2 cup tomatoes, diced
  • 1/2 cup dry toasted almonds, sliced, unsalted
  • 1 cup fresh parsley, chopped
  • 1/4 cup fresh spearmint
  • 2 tbsp. extra virgin olive oil, Tuscan, unrefined
  • 1 tsp. Kosher salt, coarse
  • 3/4 tsp. ground black pepper
