- 1 tbsp. lemon zest
- 1/4 cup fresh lemon juice
- 1 English cucumber, fresh
- 1 1/2 cup tomatoes, diced
- 1/2 cup dry toasted almonds, sliced, unsalted
- 1 cup fresh parsley, chopped
- 1/4 cup fresh spearmint
- 2 tbsp. extra virgin olive oil, Tuscan, unrefined
